Every now and again I come across a real doozy of a recipe – so why not share! I am also always on the hunt for a good one myself. I am not a fan of highly technical fare or anything requiring fine motor skills – ‘simple and yummy’ is my cooking mantra!

Here’s one for ya! I think you’ve tried it before.
Cowboy Salsa (or bean salad)
Goes great with Chili ‘n Lime tortilla chips or on it’s own.
Mix Together:
1 can shoepeg corn (or kernel corn), drained
1 can black beans, rinsed and drained
1 chopped tomato, or 2 romas
1/2 bunch chopped cilantro
3 chopped green onions, optional
2 chopped avocados*** add this last and mix gently with corn/bean mixture
Dressing
1/4 cup red wine vinegar
1/4 cup olive oil
2 tsp minced garlic, fresh
3/4 tsp salt
1/8 tsp pepper
1 tsp cumin
Add dressing to corn/bean mixture, then CHILL WELL before serving.
You can add avocados right before serving as well.

Hey V,
Found this marinade on the internet. Love it. It’s mostly things you have at home. I’ve marinated anything in this all summer, and then BBQ’d it. Delicious.
1 cup vegetable oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup prepared mustard
1 teaspoons coarsely cracked black pepper
2 cloves garlic, minced
